30 Weeks





3rd Trimester! We are in the home stretch!

Size of baby: Around 3 - 3.5 lbs

Total Weight Gain/Loss: I've gained 10 lbs

Maternity Clothes: Comfort comes first when I'm at home, and on the run its jeans and a cute top.

Gender: Boy - Mason Parker Stovall

Movement: Ninja circus fighter!

Sleep: Having to take a cold shower before bed to get cool enough to sleep.

What I miss: FALL and that will be my final answer till it gets here!

Cravings: Pudding! Banana, chocolate you get the picture!

Symptoms: Lack of mobility in my part. Bending over and breathing doesn't happen these days!

Best moment this week: Realizing that today there is only 70 more days of feeling helpless :)

Cheesy Taco Pasta! Thats whats for dinner!

have been on a lets try it kick and so far so good! I came across this on pinterest and had great reviews so I'm giving it a go!



Ingredients:
1 lb. ground beef {I used 80/20]
1 taco seasoning packet
1 1/2 cups southwest salsa
1/2 cup water
1/2 lb. pasta {I used rotini}
2 cups grated cheddar cheese
1/4 cup cream
salt & pepper, to taste

Directions:

Bring water to boil to cook the pasta. Salt it and cook pasta until al dente.

While the pasta is cooking, in a large skillet, cook ground beef, breaking apart as you go. Once thoroughly cooked, drain meat and run under hot water to remove any fat. Wipe out pan with paper towel and place back on heat. Pour cooked beef into hot pan with taco seasoning, salsa and water. Simmer until pasta is finished cooking.

Once pasta is cooked, drain well and pour into skillet. Top with cheese, cream, salt and pepper. Stir until cheese melts and noodles are coated in sauce. Serve immediately.

Movement: Knocking the wind out of me at times!

What I miss: FALL and that will be my final answer till it gets here!

Cravings: Pumpkin Spice everything! Now I want some pumpkin ice cream!

Symptoms: Lack of mobility in my part. Bending over and breathing doesn't happen these days!

Best moment this week: Coren started saying dada and Aiden is playing so great with his brother! Really cute to watch them play blocks together.

Pumpkin Spice Cupcakes!

Were a big hit in this house today! I tried a different recipe than I originally was going to try. So glad I did, they are the most wonderful moist cupcake I have ever made! Yummy, yummy, yummy is all I can say! Here is the recipe and some pictures of the final product! Enjoy!






Ingredients

1 cup granulated sugar
1 cup brown sugar
1 cup vegetable or canola oil
3 eggs
3 cups all-purpose flour
2 teaspoons baking soda
2 1/2 Tsp Pumpkin Pie Spice
1/2 tsp salt
1 package instant vanilla pudding mix
1 can or(15 ounces) pumpkin puree ( We always use fresh pumpkin but you
can use store bought also)


Directions

* Preheat Oven to 350 degrees F
* In a large bowl, combine sugar and oil until blended.
Add eggs, one at a time, beating well after each addition.
* In a separate bowl, combine flour, baking soda, Pumpkin pie spice,
salt and pudding mix.
*Add flour mix to egg mixture alternately with pumpkin,
beating well after each addition.
*Fill lined cupcake pan 3/4 full and Bake at 350 degrees for
25-30 minutes or until toothpick inserted near the center comes out clean.
*Remove from pan and cool completely.

Coren is 9 months old!

Coren aka Bitty turned 9 months old on the 17th. He is such a mama's boy. He calls for me all the time,its so cute! He is an unassisted sitter and he army crawls all around. When he gets lazy he just rolls where he want to go. He has the cutest dimples ever and a laugh with a giggle that would melt your heart! My baby boy doesn't want to be a baby. He tries to feed himself with a spoon now, eats more regular food than baby food these days. He still likes his puffs a lot though. Bitty has 8 teeth with more on there way. Still having about 3-5 bottles in a 24 hours time frame. He has a hard time being the little brother. Wanting to do what Aiden does and gets mad and upset when its just impossible for it to happen. He already loves books. To eat and to get read to :) Aiden isn't happy when he tries to eat his books lol. No baby is what you end up hearing! The boys are interacting with each other more and more. Aiden wants Bitty to learn how to roll a ball so badly and gets frustrated at times, but then just says he's a baby, shrugs his shoulders and walks away. So stinkin cute! Bitty sleeps from about 8 to 7:30 which is a blessing since this mama needs her sleep :) I hope to be as lucky with this next one with his sleeping habits. Here are a few fun pictures to show his personality at its best!

All in all, Coren is a delight and such a good little man. We love him so much and adore him daily. I thank God for all the little men he has blessed us with and I pray that I can be the best mommy a boy could ever ask for.

Pumpkin Spice and everything nice!

I am craving something pumpkin! I looked up recipes that I will be trying this coming week. OMGoodness they look so delicious. Pumpkin Spice Cupcakes with Cream Cheese Frosting, Pumpkin Spice pudding/mousse, and a Pumpkin Spice latte homemade! We use fresh pumpkin in our house. We cook, puree and freeze so we have it on hand all year round. None of that store bought stuff yuck! When I make them I will take pictures and let you know how they turned out!
Pumpkin Spice Muffins (recipe adapted from Fine Cooking)

Ingredients

4 eggs
1 cup sour cream or plain yogurt
3 cups pumpkin purée (canned is fine)
1 cup packed light brown sugar
1/2 cup sugar
1/2 lb. (16 Tbs.) unsalted butter, melted
1-1/4 lb. (4-1/2 cups) all-purpose flour
2 Tbs. baking powder
1 tsp. baking soda
1 tsp. salt
3 Tbs. ground cinnamon
3 Tbs. ground ginger
Pinch cloves

Preparation

Heat the oven to 350°F. In a large bowl, whisk the eggs, sour cream, pumpkin purée, brown sugar, sugar, and butter. In another bowl, sift together the flour, baking powder, baking soda, salt, cinnamon, ginger, cloves, and pepper.

Slowly add the dry ingredients to the wet, stirring until just mixed. Gently fold in the raisins. Grease and flour a muffin tin (or line it with muffin papers, preferably foil). Scoop about 1/2 cup batter into each tin so that the curve of the batter is even with the rim of the cup. (Refrigerate any extra batter in an airtight container for up to a week.)

Bake the muffins in the middle of the oven until firm to the touch and a toothpick inserted into them comes out clean, 30 to 35 min. Remove the muffins from the tin when they're cool enough to handle. Frost with cream cheese frosting (I piped using a large star tip)

Cream Cheese Frosting (recipe adapted from Pioneer Woman)

Ingredients

¼ cups Softened Butter
4 ounces, weight Cream Cheese
½ pounds Powdered Sugar
½ teaspoons Vanilla

Mix all ingredients on high until soft and whipped. Spread onto completely cooled muffins, or place into a large pastry bag with a large star tip and go crazy! Store in the fridge, as icing will soften at room temperature.




Ingredients

1 package (3.4 ounces) instant butterscotch pudding mix
1-1/2 cups cold milk
1 cup canned pumpkin
1 teaspoon pumpkin pie spice
1-1/2 cups whipped topping
Gingersnaps, optional




Ingredients:

2 cups milk
2 tablespoons homemade pumpkin puree, canned pumpkin or 1 teaspoon of Torani Pumpkin Spice Syrup
2 tablespoons sugar or sugar substitute - you can halve this amount
2 tablespoons vanilla extract
1/2 teaspoon pumpkin pie spice
1-2 shots espresso (about 1/4 cup of espresso or 1/2 cup of strong brewed coffee if you don't have an espresso machine.)


I am so ready for fall, I day dream about walking through the falling leaves in Ashland drinking a pumpkin latte with the family. Scarves and hats! This mama is done with summer and really its not been too bad of one or that long I might add! But I miss the cool evening air and the nights getting earlier. I really dislike looking out the window at 8:30 and still see blue sky! Not ok with me at all or my toddler who knows that when its dark its bedtime. Whoever told him that needs to get a good talking to haha! Also when its 6:30am and its light out and the kids want to get up with the birds that not ok with me either. I finally bought the eclipse shades for the nursery. Blocks out sun and most noise that can come through the window. Its helped alot this summer, plus helps keep it cooler in there throughout the day.

I think its the pregnancy talking when I'm thinking and wanting fall so bad. If falls here then December is just right around the corner and baby Mason is due December 7th!

Once December 7th comes time can stop and I'd be happy. Baby Mason will be our 3rd and last child. I always wanted 3 kids and Chris never in his wildest dreams thought he would have 5, let alone 5 boys. He's a great father and provider and he makes me proud to call him my husband. I really need to take more pictures of him with the kiddos, but it seems when I have the camera out I focus more on just the kids so thats what I'm going to work on this holiday season. More pictures of the entire family because that what life is about right?

Cravings: Cold grapes!

Symptoms: Braxton Hicks are hitting harder these days!

Best moment this week: Coren is saying mommy when he wants me now! So stinking cute!

My day today!

Is going great! Chris and my brother Kyle are bird hunting this afternoon. I have made homemade granola bars and homemade tomato sauce. Aiden is enjoying some tv time since he had TV taken away from him this morning for poor behavior. Coren is taking a much needed nap. Poor little man is teething again and is slightly on the cranky side. Here are a few pictures to show what my day has looked like! On another note, the granola bars are a big hit. Chris and Kyle ate them right out of the pan and loved them! Go me!

The newest recipe I tried!

Ok who doesn't like Rachel Ray? Ok I'm sure a lot of people but I love her :) I follow her on FB and love her recipes. So I tried one this past week and everyone in the house loved it! It's vegetarian but could have chicken tossed into it if your desire. Its light and pretty healthy too! PLUS!!!!! Here is what it looks like and the recipe just in case you would love to try it!

Mondays.......

Gotta love Mondays! Being sick for days have put a hitch in my giddy up. Today I feel almost normal :) ok as normal can be hahaha! I started dinner yesterday, homemade chili (crock pot style). So cleaning is going to be whats on my list today. Mr.A is refusing his morning nap but Coren is doing great and sleep well for mommy. Mr.A is watching the Princess and the Frog for the first time and loving it.

So I'm going grocery shopping on Wednesday so Thursday we have some fun homemade things on our list to make. Granola bars, berry pancakes and healthy vegan oatmeal cookies. I'll post recipes a little later. Mr. Coren has woken up and is needing some mommy time.

Staying Organized 101 Part 2

So its been a week of doing our new routine. We have success so far! Beds are made daily, kitchen is clean all day long, laundry is under control and homemade dinners every night, yummy! I've also been able to vacuum almost every day, which I was happy to get to it 2-3 times a week. The bathroom looks great and this mama is just happy that its working out and my hard work hasn't been unnoticed! I have a few new schedule lists that I started using instead of the originals I posted last week. I'm going to share them with you because different list for different people. And I'll put the ones I use daily to keep me organized.

I wanted to tell you all that because of these schedules I make daily I even have time to clean out drawers haha! Its the little things in life isn't it!

September! Falls almost here!

I'm in love with fall! The weather, the coffee, the decorating, and the leaves! Its the most beautiful time of year. Orange, red, brown! What's not to love! I remember when Chris and I first got together walking Down Town Ashland. Walking through the park with all the leaves on the ground. Just wonderful pure bliss. Well September is here and its not quite the weather I'm looking for but it does mean its just around that corner! Here are things that I love about fall!
